Raw Cauliflower Salad

Raw Cauliflower Salad with Golden Raisins, Toasted Almonds, Mint and Meyer Lemon Juice

3 cups sliced cauliflower
1/4 cup golden raisins
1/4 cup slivered almonds, cooked in 1 tbsp olive oil until brown
2 tbsp meyer lemon juice (about 1 small lemon)
2 tbsp finely chopped fresh mint
4 tbsp fruity olive oil (or almond oil)
Salt and pepper to taste

Refrigerate at least 1 hour before serving. It's okay to substitute a regular Eureka lemon, just add 1 tsp honey or agave nectar.

Lovely summertime salad that hits all the right notes for me.
